


GINGER - Red Ginger
One of three main varieties of ginger (four if you're in Indonesia), it is not used as a culinary root.

RED GINGER - Zingiber officinale var rubrum
Not to be confused with the Malaysian Red ginger (Alpinia purpurata that is also called ostrich plume and pink cone ginger), red ginger is part of the zingiber (ginger) family, and is used as a traditional medicine throughout Asia, arabic nations and India.
Red ginger is used because it is more bitter and pungent than other types. In addition to its smaller size than the other two types of ginger, (the ginger emprit and elephants ginger), red ginger's skin color is also different (it is pink), the meat is slightly brown, and it has a more coarse fiber than the other two gingers.
